The
biological farm Tuscany covers 316 hectares of land,
of which 115 is cultivated and 180 is wood.
The main activity of the farm is livestock breeding,
namely Chianina cows (one of the 5 Italian native breeds as
well as Marchigiana, Romagnola, Maremmana and Podolica breeds).There
are 60 brood-mares and 1 bull which originates from farms specifically
selected for fertilization. The animals are left to naturally
graze in the farm's meadows and woods except for a few calves
which are kept in the small cowshed for weaning and for some
cows which may have problems with calving in the open air. During
the day, apart from the meadows, the cattle's diet is integrated
with hay that is produced in the farm while animals in the cowshed
eat hay, freshly-cut green grass (when available) and only vegetable
flour (maize, barley, wheat, oats and millet) which is milled
directly in the cowshed. The farm has been awarded the IGP brand
(Protected Geographical Indication).
The farm also has olive groves of various dimensions
and a vignard of about 1 hectare. After the vintage, the grapes
produced by the vignard are given to a local wine producer while
the oil produced by the olive harvest is used only for family
use.
An enclosed area of about 9 hectares has also been created inside
the farm's wood. This is used for the breeding of wild pigs,
which mainly feed on wild fruits and berries.
There are also some bee hives for the production of honey. These
are placed in various parts of the farm in order to provide
bees with a wider variety of pollen.
But the most unique aspect of the farm is its location, since
it lies near the Montioni Natural Park in an area where hunting
is forbidden. With some luck it is therefore possible to spot
wild animals such as: pheasant, hoopoe, rain-bird, hawk, buzzard,
heron, owl, owlet, barn owl, squirrel, fox, hare, roe and deer
as well as the more common magpie, blackcap, goldfinch and swallow
among others.

The farm is composed of three structures which have different features:
